RESUMO

In this perspective analysis, we strive to answer the following question: how can we advance integrative biology research in the 21st century with lessons from animal science? At the University of Ljubljana, Biotechnical Faculty, Department of Animal Science, we share here our three lessons learned in the two decades from 2002 to 2022 that we believe could inform integrative biology, systems science, and animal science scholarship in other countries and geographies. Cultivating multiomics knowledge through a conceptual lens of integrative biology is crucial for life sciences research that can stand the test of diverse biological, clinical, and ecological contexts. Moreover, in an era of the current COVID-19 pandemic, animal nutrition and animal science, and the study of their interactions with human health (and vice versa) through integrative biology approaches hold enormous prospects and significance for systems medicine and ecosystem health.

Various floor systems are used in cattle housing with different characteristics in terms of roughness, abrasion, wetness, bedding material, ease of cleaning, etc. Thus, the activity and welfare of the animals are greatly influenced by the type of floor. The floor of the barn can influence the development of health diseases, technopathies and the production and quality of animal products. Therefore, in the present case study, we studied the effects of two different flooring systems on the performance and on some behavioral and cleanliness parameters in heifers. Two floor systems (concrete slatted flooring (CSF) and high welfare flooring (HWF)) and two breeds (Charolais and Limousin) were used in the experiment. Heifers on HWF tended to show a higher frequency of grooming, rubbing and aggression than those on CSF, but not of standing, lying, eating, drinking, rumination, resting, stereotypies and covering of the animals. In addition, animals housed on HWF also appeared to show higher cleanliness than those housed on CSF. Results indicated that animals housed on HWF exhibited more social and self-care behaviors, suggesting that animals housed on such floors show more species-specific behaviors and have higher welfare.

Transglutaminases (TG) are enzymes that improve the functional properties of proteins in meat products, contribute to the strong cohesion of meat without the further need for the addition of sodium chloride or phosphates, and have a positive effect on the texture of the meat product. This study aimed to investigate the physicochemical and sensory attributes of intact and restructured chicken meat supplemented with different TG proportions. The study was conducted on chicken breast meat samples (n = 40) originating from the line Ross 308. The intact samples were separated from the pectoralis major muscle, whereas the rest of the breast meat was ground, divided into equal parts, and supplemented with TG (0.2%; 0.4%; 0.6%; 0.8%; 1%). The intact meat had the highest cooking loss (19.84) when compared to 0.2% (15.51), 0.4% (15.04), 0.6% (14.95), 0.8% (14.95), and 1% (15.79) TG-supplemented meat. The intact meat had greater shear force (16.90) than 0.2% (5.16), 0.4% (5.39), 0.6% (5.16), 0.8% (5.98), and 1% (6.92) TG supplemented meat. There was no difference between intact meat and TG-supplemented meat in color, taste, odor, texture, and overall acceptability (p > 0.05). Therefore, TG supplementation can be used in improving yield and texture of minced chicken meat.

The aim of this study was to investigate the effects of olive leaf and marigold extracts on the apparent total tract digestibility (ATTD) of the principal nutrients and energy, as well as on mineral utilization (Ca, P, Mg, Mn, Fe, Cu and Zn) in relation to bone characteristics in broilers fed walnut- or linseed oil-supplemented diets. Thirty-six 12-day-old commercial broilers Ross 308 were reared in metabolic cages, assigned to one of the six dietary treatments (3 × 2 factorial design): three supplements (not supplemented, olive leaf extract, or marigold extract), and two oils (walnut or linseed oil). The results showed that the marigold extract reduced Zn and P balances and tended to lower the balance of ash and Mg, and the ATTD of Zn and Mg. Diets with linseed oil increased the ATTD of acid detergent fiber and reduced the ATTD of the organic residue and Cu. No differences in the bone characteristics of tibia were observed between treatments. These results indicated that the inclusion of marigold extract had a negative effect on the Zn and P balance, and that neither extract had any major effect on the digestion and utilization of energy and other investigated nutrients, or on bone mineralization, irrespective of the oil source included in the diet.

Thirty two autochthonous Jezersko-Solcava lambs were used to investigate the effect of production (pasture vs. stable) and weaning system (suckling vs. weaned) on fatty acid composition of Longissimus dorsi intramuscular fat in a 2 × 2 factorial design. Pasture lambs had lower intramuscular fat concentration (P<0.0001) more PUFA and trans C18:1, more ALA (P=0.0322), ARA (<0.0001) and EPA (0.0149) but less SFA (P<0.0001) than stable lambs. Weaning system affected PUFA (P=0.0040) and MUFA (P=0.0070) but not SFA and trans C18:1 fatty acids. The interaction of production system and weaning system was significant mainly for trans C18:1 and trans C18:2 fatty acids. Finally, lamb meat from all four treatments which are traditionally used in rearing of Jezersko-Solcava lambs are favourable from the nutritive point of view, due to their low n-6/n-3 ratio.
